Gluten-free on Carnival Fascination - any feedback?

Has anyone sailed on Fascination lately, and required gluten-free meals? We've never sailed with Carnival before, and I'm wondering what good gluten-free selections are available on Fascination...I've read about g-f pancakes, pizza, etc.
