Elegant Nights on Conquest

I am sailing out of New Orleans 1/22/2013 on the Carnival Conquest and from all of the great reviews I want to book The Point. I am wanting to do this one of the two sea days before we hit the ports, but I am also assuming one of those sea days will be the first elegant night. Does anyone know which nights are elegant nights on a sun to sun 7 day cruise. Also my mother will be cruising with us this trip and loves white zinfandel wine. Does anyone know what the wine menu looks like at the wine bar?

First Elegant night is the first Sea Day, second one is usually night 5. Or at least that's they way it's been when we've sailed on her. :)
