Don't know about cooking classes but I've booked a tour with Vallarta Eats where a guide takes you around to family run restaurants and you taste as you go as well as getting background on the city.

there is a place called La Luna on Venustiano Caranza.....they do cooking classes.....not sure of their schedule, so you may want to research it.....on TA it's getting good reviews.

I did the Vallarta eats last year. It was excellent. Make sure you do not eat anything before the tour as you really do get a lot of food. Also liked all the local input from our guide.
