how to get a customized tour with phil or courtney

I've gone on the websites for these gentlemen. There are specific tours offered but it seems that I have read on here of others doing more/different things than what's offered in the prepacked tours. Can I just contact them with what I have in mind a see if they can customize. I would like to see a historical site like a plantation, go to Dunns River Falls, eat at a local restaurant, maybe take a beach break. It is just myself, female and my daughter, my mother is concerned about our safety but I'm sure we will be safe. I've read here with Peat Taylor of some having to wait at the port for almost an hour for other couples. I would not want that to happen. Will be there in a few weeks. Hope I will still be able to book something.
