jbmm Posted July 9, 2005 #1 Share Posted July 9, 2005 I see several soup recipes have appeared on this board. Does anyone have the recipe for the Strawberry/Mint Bisque that they serve on Fantasy? It was soooo good. We enjoyed all the food and the opportunity to try some things we wouldn't normally have ordered if out at a restaurant. We loved it all! Cotton Posted July 9, 2005 #2 Share Posted July 9, 2005 This is the recipe I've used for years when catering. It's very similiar to Carnival's Strawberry Bisque. Chilled Strawberry Bisque 2 cups frozen strawberries 1 cup milk 1/2 cup of heavy cream (whipping cream) 1/2 cup sour cream 2 Tbsp. sugar fresh mint for flavor and garnish Puree strawberries, milk, cream and sour cream in blender or food processor until smooth. Stir in sugar. Chill 8 hours or overnight in refrigerator before serving.
jbmm Posted July 11, 2005 Author #3 Share Posted July 11, 2005 Thanks so much! Have you ever blended some of the mint into the soup? I believe that's how it was on the ship, although I couldn't really taste it.
Cotton Posted July 11, 2005 #4 Share Posted July 11, 2005 Nope, never tried that. You don't want to bite into a piece of mint, so why not add a teeny bit of liquid mint flavoring into the soup? My son paid me a great compliment. He went on his first cruise last December, and had the bisque. He told me it tasted like melted strawberry ice cream, period. Said mine is much better. Ah, gotta love that boy.:D
ferret Posted July 12, 2005 #5 Share Posted July 12, 2005 I too thought the chilled fruit bisques tasted like melted ice cream. I was going to give that as my recipe suggestion. :D
