For water, the ships water is desalinated and purified, also chlorinated, however in the buffet it will (probably, speaking from other lines' experience) have been additionally filtered and may taste even better... although there may be signs that say do not fill bottles, they just mean do not hold the mouth of your (potentially contaminated) bottle up to the dispenser -- take a clean glass and transfer the water to your bottle. We did that once then stuck to tap water from the bathroom and chilled it in our fridge, which we'd had the steward empty.
