At dinner in the dining room the Head Waiter brings me the menus for lunch and dinner for the next day so that we can pre-order. They can do the same thing for a low-salt diet. There is a separate line in the galley that the special orders come from. They will do their best to accommodate your requests if it is possible. I have found it easier to discuss my requirements on other lines. As some food comes pre-prepared, I am sometimes still getting salt due to the head waiters just giving you the menus. On RCI, Voyages of Discovery or P&O, for instance, they will tell me I can't have something due to my allergy or salt content which cannot be removed and suggest an alternative or I have something off menu.
