My wife and I will be on the Pride of America sailing 5-30-15. We booked the UDP as our perk. My question is, will any of the specialty restaurant's be open for lunch on this cruise, and if so can we eat there for free with our UDP package?

No, maybe the sushi place only.

There aren't a lot of people on board during the day due to cruise being so port intensive. One of the main dining rooms will be open as well as Cadillac diner.

That makes sense, I was hoping for 1 of them to be open for the 1st day.

And the buffet of course. Look for the Aloha Lanai which has outdoor seating, canopy shaded, nice comfy couches and chairs. Great place for sailaways, or to carry your plate from the buffet and eat in the fresh air away from the crowds. It is adjacent to Moderno and they set up a full breakfast buffet in there every am.
