One of the nicest hotels we have stayed at was the LaConcha. Beautiful high end hotel with a very ritzy bar/pool scene at night.

Another vote for La Concha. Multiple pools available (including one set aside where no kids are allowed), plus beach access with towels and chaise lounges provided for free. I found the rooms very well appointed and if you have a beachfront room, the view is simply amazing!
