Book daughter with you and the boyfriend with grandma.

 

When you get on the ship, go to the Purser's Desk and get the keys how you want them.

 

Carnival does not care who sleeps where. They do this all the time.

You can call to book and they can do it for you, or they could to book my kids in a separate room. They had to be next to me or across the hall but it was doable. Unless they have an issue with the boyfriend not being in a room with someone 21 + because his parent isn't onboard. If that's the case then I agree with switching once on board
