Highchairs in specialty dining

Just wondering if highchairs are generally available in specialty dining restaurants? My daughter is very quiet and does well in restaurant environments and we plan to eat in specialty restaurants most nights.

We recently sailed on the Independence and dined in Chops with my 16 month old granddaughter. She was made most welcome and was fussed over by the staff. A highchair was readily available
