We are stopping in Aruba and didn't make any excursion plans, either with the ship or private

As we get off the ship will there be an opportunity from local vendors / tour operators or even vendors some sort of catamaran trip, at the port entrance as we get off the ship

Yes -- there will be no shortage of taxis / minibuses offering trios. I would recommend going to the Natural Bridge
