Cuba excursions to bird sanctuaries or wildlife refuges?

New to Viking and considering a Cultural Cuba cruise winter of 2020. Wondering if there might be any available excursions (included or otherwise) to get a glimpse of native birds or wildlife. Also a little nervous because of that 1 (of only 2) port cancellations on one of the voyages this February. Does this happen often? Thanks for any information!
