Ship excursion or go on own ? not sure...

Can't decide on ship excursion, (Carnival Valor 3/9/06) some are very overpriced and not much time allowed or just not intersting. Thinking about water taxi to Caye Caulker for the day, just concered about getting back on time. Are the taxi reliable? run on schedule? Another idea horseback ridding but the one with carnival you don't ride the whole time you pay for, 1/2 the time is walking a nature trail. Those that went on own horsback ridding did you feel confident you would be back on time? Please recomend who you used. Also, has anyone gone to the Zoo on their own? how did you get there? was it reliable? :)
