I believe the VeriFLY app uses UTC/GMT, so 7:00 PM CDT is Midnight UTC/GMT.  It may actually let you enter it at 7:00 PM CDT, but I would wait. You don’t want to get to the pier and be denied over a 5 hour difference.

Don't go by Verifly, go by Carnival's protocols, which are confusing, so you can't count on Verifly. The main problem now is that if you go to Alaska and are taking antigen, it has to be within 2 days of sailing, because of Canada requirements (be happy it's not the 1 day they originally required).
