Rescheduling specialty dining after booking with physical gift card

Want to reschedule reservation for another night

Is it best to reschedule once on board or cancel and rebook ahead of time?

I booked it with a physical gift card 

If I cancel does the refund come in physical or digital card and how soon?

Would refund be available for this trip?

depends on which specialty dining as some may be sold out and unable to rebook online.   Steakhouse you can do on board and save your self the wait times for refund as it will come back in form of original payment.  Ive never dealt with gift cards so i couldnt say whether they would send you card in mail or just email you digital card.
