You will find fish dishes, fried or baked fish is most likely to come in a creole sauce. There's a Jamaican restaurant not too far from the ship (but maybe too far for most people to walk), JamaicaMeCrazy, in the Bella Vista Scott Hotel. They probably serve jerk dishes. That's a good question - what food is St Thomas known for? I would say the conch and butter sauce with fungi, or any other fish and fungi. Havensight Cafe, within walking distance of the ships at Havensight, usually has some local dishes on the menu, so you can check there if you don't go into town.
