Reservations for every restaurant?

You do not have to make reservations at all if you don't want to. you will be seated in the dining room relatively quickly depending on the time you want to go, some times busier than others as you might suppose.

Even the specialty places you can usually do a walk up if you are flexible and are prepared to wait, but if you know you want to go to one on a specific night then make a reservation early for that.

No, you do not have to make reservations in the main dining room or some of the others. I would avoid the peak hours of 7pm to 8:15pm. As for the specialty, extra charge it is much better to make reservations, especially with 6 of you. We usually check menus as soon as we get on board, of course pretty much know what days we will be off the ship touring and if we will feel like eating in the specialty dining rooms those nights and what else we may want to do: from there we make our reservations.
