What to do after the beach...

I will be in Cozumel on 8/28. I plan on skipping any excursions and doing Paradise Beach (thanks to these boards!). What would you do after the beach? I will be there until 12am, so I have all day and all night. I will be cruising with just my boyfriend, so no kids. Anything we must not leave Cozumel without doing? All advice would be appreciated!

The only thing that comes to my mind is Scuba Dive. I would LOVE to be in Coz late enough to do a night dive.
