I have not been having luck with answers on the port boards so I thought I would try here.

Has anyone done these...

Lloyd's bike ride in Key West

Mr Sanchos horseback riding and beach in Cozumel

Horseback riding at Bacab Eco park in Belize

Tulum Xel Ha excursion in Playa del Carmen

 

Any info would be greatly appreciated.

The only one I'm familiar with is Tulum/Xel Ha. Tulum is in great condition and is a must see if you're into ruins. Xel Ha is pretty much floating down a river in a tube. The snorkeling was not super impressive. If you're not that too into ruins, consider Xcaret instead. It's a great experience with tons of things to do - culture, cave snorkle, ect.
