Confused about local time vs. ship time!!

I am confused about what others have written about the difference between ship time and local time. (I need to know to book an island trip with a private company. ) My RCI ship is docking on a Tuesday morning in late March. Will the ship time be the same as the local time? My only prior cruise was to Alaska where the times were always the same! THANKS!!

Coz is on US Central time if that helps any. Last week on the Conquest we changed our clocks to eastern time the first night and stayed that way until we left the Cayman Islands and then switched back to central for the rest of the trip.
