Will US $ be accepted by taxi drivers, excursions not thru the ship (planning on going by horseback to the waterfall), etc. or do we need to convert to DR$?

Yes, it will be gladly accepted. Negotiate price before entering, US 10 or 15 should be enough which is around 400-500 Dominican Pesos.

i JUST LEARNED from an independent tour operator (casadorado.com) that if you get away from the city of Samana you probably will not be able to use credit cards, and although they will take US dollars they may not have dollars to give you in change, only Dominican money will be given back. So take lots of single dollars.
