Upcharge for restaurants on GEM

Does anyone know which restaurants on the GEM charge a supplement for dinner on the one night dinner/dance cruises? Which restuarant would you recommend and why?

I don't know specifically about these very short cruises, and which restaurants are open at all , but here is a recap of all of the Gem restaurants
