Best winter break cruises for small kids

We just got off the NCL Spirit 2/15 and there were 250 kids on board. Great kids crew and wonderful excursions that I booked myself. We have one child, now 4, and wanted to experiment with a non-Disney vacation. Now would like to hear about other great cruises for kids during the Feb and/or April breaks.

 

Really want to do more exotic stuff -- like the Spirit went to Guatemala, Belize and Costa Maya. So would love to hear about eastern Mediterranean, South America etc.
