You should get the bed specified on your booking by your travel agent or whoever you booked through. The two beds can be made as one or separated but you need to make sure your preference is stated.

am looking at booking a trip in March 2017 with a friend on the Oceania Regatta, an oceanview cabin. can anyone tell me if you can get twin beds instead of the usual queen-size-- I'm not big on sharing a bed with my friend.

You may certainly request two beds instead of the Queen bed, but the replacements won't be Twin sized.

Two Twins make up a King sized bed, a Queen bed is 18 inches narrower than a King.
