So I have seen a few menus for the Chef’s table - lots of seafood. Can anyone tell me what, if anything, they do about allergies - specifically seafood allergies? Not shellfish, but all seafood. The experience sounds awesome, but it looks very limiting if you cannot try most of the dishes. Do you just skip the whole thing?

We are in Haines on June 28th and looking for what to do - if renting a car, where is good to go, what things can you get to? Which rental car company did you use, were they easy to get to? TIA
