Does anyone know what brand and types of tea are available on board in the specialty teas? In the regular “free” teas?

Just booked the Scarlet Lady for a cruise in 17 days. The only restaurant times available to book are very late or very early. Neither times are to our liking. I’m wondering which would be a better strategy to get times that suit us. Should we book now and hope to reschedule on board, or just wait and hope something opens up on board? We’re very interested in trying several venues and will take a late dining time rather than miss out on the experience. This is our first VV cruise so we would really appreciate any suggestions or experiences you’ve had with this.
