I think that some people have body chemistry that just loves to make lots of cholesterol. A Doctor who wrote "The Blood Type Diet" indicates that Type A is the original Vegan and this helps us feel better. When diagnosed with high cholesterol, I went cold turkey to my version of "Extreme Vegan" without dieting. I ate NO fats, oils, or refined sugar or flour. The weight fell off. My motto is: "Thank God that salsa and wine are vegan!" OTOH- DH is Type O+ and needs to eat meat, etc. His cholesterol is fine. The Atkins diet works well for him. It is also interesting to note that the Dali Lama is Type O and really wants to be vegan but can't cut it. I am just offering my experience as an option to look into. And yes, it can be challenging to travel this way but doable. Bottom line, find what works for you and helps you feel better. P.S.
