What to do on layover in Orlando/pt Canaveral

I'm sailing from Pt Canaveral this month. We return at 7am but my flight isn't 7:25pm. Any suggestions for something to do in Port Canaveral or Orlando rather than sitting in the airport?

Visit Kennedy Space Center, go to Cocoa Beach or drive up to Daytona Beach. (Disney, Universal and Sea world would be to far away to properly enjoy)
