Are you DIY? If so, you are probably correct.

If you are open to using a tour company, I'm pretty sure you can accomplish pretty much what you want to see. In 4 hours we went to Eze, St Paul the Chateau lookout, and drove through Nice.

That being said, we loved St Paul de Vence, especially the White Penitent's Chapel (so different from anything we've seen).

Both St. Paul De Vence and Eze (Monaco) are medieval walled cities. I loved St. Paul but Eze not as much. I think you picked the right two.
