I am thinking about purchasing a classic package. It is my understanding that this would include all non alcohol items such as soda and cappacino as well as cocktails and alcoholic drinks as long as their price does not exceed 8.00. Am I correct? So a cappacino from the coffee specialty shop without alcohol would be included, correct? Thanks in advance.

Yes you are correct. Everything you mentioned will be included

close. Beer is limited to $5, only cocktails have the $8 limit. Also, unlike the premium package, you cannot buy a more expensive drink and pay the difference (though apparently there are some bartenders that will bend this rule)
