There are numerous selections each night. Your menu will include those items that are available daily on the left-hand side of the page. On the right hand will be the Chef's selections for that day.

A quick search on Cruise Critic should yield you the menus. They are basically the same fleet wide.

Lobster night is on the first night, embarkation night. it is served with a piece of red snapper. Not a Maine lobster but Caribbean tail.

NCL has Dress Up or Not nights. You choose what you want to wear so it can be formal or informal.
