How early to book ship's excursions

There is nothing to lose by booking early while waiting can leave you stranded. You can always cancel if you change your mind.

This. If you know what you want to do and are sure you want to use the cruise ship excursions versus an independent then the sooner the better. Some of the popular ones really do fill up - it's actually not just a marketing ploy for a change;)

Edit to add: also while you're researching pick a back up too. Sometimes they get cancelled either due to weather or lack of interest or god knows what.
