Virtually everything you can purchase once on board the ship. About the only thing I've seen that you cannot use OBC for is booking a future cruise or open booking.

They can be used for anything purchased onboard. Spa, drinks, exursions, shop purchases , speciatly reataurants etc

That is my understanding also. Everything but future cruises.

Note too that any unused credit will be refunded back to your credit card on file.

If it's refundable OBC you are correct. If it's non-refundable OBC (OBC coming from RCI) our experience has been that it depends on the ship if it will be refunded back to the CC on file.
