Pumpkin Soup on Carnival

I read Jamie Oliver's pumpkin soup recipe and realized that in Europe, butternut squash is called butternut pumpkin. He used butternut squash. I made Carnival's soup with roasted butternut squash and it was perfect.

 

8 and 3/4 c. chicken stock (I used vegetable for a vegetarian friend)

1 c. onion quarters

2/3 c. leeks, in chunks

2 cloves garlic

3 T olive oil

1 1/2 c. half and half

1/4 c. heavy cream

1 T. chicken base (vegetable)

1 butternut squash peeled, seeded and cut into chunks

salt to taste

1 T black pepper

 

Roast onions, leeks, garlic cloves and squash with olive oil in a preheated oven at 400 for 30-45 minutes. Puree.

 

Bring stock pureed vegetables and chicken base to a boil. Simmer for 45 minutes.

 

Add half and half and simmer.

 

Season with salt and pepper.

 

Finish with cream.

Thanks for the recipe. Looks good.

 

I love creamed soups but hate the fat. I now use canned, condensed nonfat milk in soups instead. It's as thick as half & half and has no fat. In soup, you can't tell the difference!

 

Just a thought if you're trying to cut down on fats.

I am passionate about this soup.

 

Sometimes I order 4 bowls and skip everything else that night at dinner!!

 

I purcahsed the carnival cookbook that has this recipe in it and (after cutting it down from serves 100 to serves 20) I made it and served it last Thanksgiving at my house. I had 18 guests including two from Peru and one from Guatemala and everyone LOVED it. I normally de-fat and otherwise change recipes to be healthier but this one is just to good to mess with, so I made it with all the naughty stuff it called for. I did however use canned pumpkin puree (obviously not pie filling but it can be found in the pie filling section). I love butternut squash too but I have to stick with the original for this is truly one of my favorite foods. Added benefit--it brings me back to one of my favorite places--tha Carnival Dining Room!
