Anyone done the above and if so was it okay, also can you just book on the day.

I didn't do it but researched it and a fellow cruise member we met did. When I was there I saw they had regularly scheduled hours they rode out. Its a ride thru the woods and on the beach, not in the water. I've heard they MAY let you trot or canter for a short bit on the beach but again, I haven't done it so can't confirm. Unless Sanchos is super busy that day I don't see it filling up but when you arrive you may want to reserve your spot just incase.
