Questions about Gluten Free food on Ruby?

We are sailing on the Ruby this summer and have already sent in the special diet form to Princess. I have read about how they can modify dishes and you get to look at the menu the night before in the MDR but what type of GF food do they carry. e.g. Gluten free bread, rolls, other baked goods? I want to know if I need to bring these on board with me or will Princess already have these items.

Thanks for the links, I missed the first link and it had good information about breakfast. We avoid communal toasters everywhere. It is nice to know I won't need to schlep Udi's muffins on this trip.
