carlyshenk Posted May 28, 2004 #2 Share Posted May 28, 2004 Hi CajunLiner, Potato baskets are thinly sliced, weaved potatoes, usually sliced on a mandolin. You put them into a mold and deep fry them until they are "set", and then you fill them with whatever filling you want. Celebrity used to use them on the plates, mostly as presentation, but they stopped the last couple of cruises that we've taken. It does take a little extra time, but to me, it's worth it. I always make them when my in-laws visit. They are Celebrity cruisers and they are really impressed. They don't realize how easy it is. I must admit, I am a trained chef and I have all the right equipment to make a really easily prepared meal look really elegant. But, the potato baskets are not that difficult to prepare. They were usually filled with tiny little round potatoe balls. Delicious!
