Your experience with Windjammer theme nights

I've read some reviews of Adventure of the Seas recently (we sail on AoS in March) that mentioned theme nights in the Windjammer. This came as a surprise to me, as we didn't notice any theme nights on our last few cruises, and just assumed RCCL had stopped them. What has been your experience with theme nights? Is there any sort of regular schedule that is followed, or are these nights just up to the particular ships' staffs?

No regular or published schedule. Once onboard, you could ask the Windjammer chef when they will be having anyting out of the ordinary, like crepes, Mongolian BBQ, stir fry, etc.
