Only one person needs to call and make the reservation or you can have one person make the reservation online when booking opens for it. You can make dinner reservations 90 days prior to your cruise if you are staying in any cabin other than a suite or the Haven, which open at 100 days for them. Another thing to consider is that if not everyone has the dining package then get someone with the package to do the bookings to avoid any upfront payments (at places with a cover charge like Moderno and Teppenyaki). I believe that they may be quieter, but can't say from experience as we don't usually bother on that day. If you leave Venice at 5.30 then I bet they will be quiet then as most people will be out watching the view. If you haven't sailed out of Venice before then don't miss it.
