We think most cruise ship fish is awful (especially the flavorless farmed stuff like Tilapia).  But the best, by far, has been the Dover Sole in the Thomas Keller Grill on Seabourn.  The entire fish is finished and fileted, tableside.  And with the available cognac marinated mushrooms, it is one of my favorite cruise ship dinners.
