Freedom Bars open as soon as board? 11:45 showing in the app

If the apps show 11:45 bars open, is that really an indicator they should be open earlier if boarding earlier?  Our gameplan was have a drink or two and then go to Giovanni's lunch until rooms open.  We have 10:30 appt time so could be on around 11 if things go well.  I'm hoping to stay away from WJ and looking at Schooner or Boleros to chill.

Pool bars will definitely be open, as well as those on the Royal Promenade. There's no way they want to lose potential customers.
