ships time vs island time ?

we will be on Empress next december , 11 days from san Juan . what is the difference between ships time & island time on this itenerary ?

Don't worry about "island time". The ship, and your itinerary are on ship's time. If the ship says they will sail at 5 pm, they will leave at 5 pm SHIPS time. Set your watch according to the ship, and you'll be fine.

Your entire cruise, including San Juan, will be spent in the Atlantic Time Zone. There will be no difference between ship time and island time anywhere.

I have never been on a ship were they have not changed the ship time to match island time and we have crossed time zones on a couple cruises.

Last year on Rhapsody we stayed on ship time the whole time even though we crossed time zones. This year on Jewel we changed to match every island. It depends on the captain. He has the final say.

We've had it both ways, change/no change, change for one not another. At one time, I think it was fleet policy to keep the ship on port of embark/debark time unless it changed two time zones.
