ships time vs island time ?

Don't worry about "island time". The ship, and your itinerary are on ship's time. If the ship says they will sail at 5 pm, they will leave at 5 pm SHIPS time. Set your watch according to the ship, and you'll be fine.

Unless, island time and ship time are different and you need to know what time to show up for a privately booked excursion.
