Tasting Menu

We are going on our first MSC cruise on the Seaside and are Diamond Status.  I see one of the benefits is a Complimentary speciality restaurant "tasting menu".  Can some explain how this works.  Do I have to have a reservation in advance to eat at one of the specialty restaurants and does this count as a meal or do we also have to have reservations for a meal?

Still not sure why they call it a tasting menu. It is a regular meal where you choose an appetizer, entree and dessert from a select menu. Some people complain it is too limited in choices but I have never found that to be the case. If you find any online menus, it is what they call the Dining Experience menu. And yes, you will want to make a regular reservation.
