Snorkeling - Grand Cayman

Swimming with rays - Grand Cayman

Ruins - some nice ones in Tulum which is an excursion from Cozumel

Adventure type activities - cave tubing and zip lining have been offered in Jamaica

 

 

Overall, sounds like you want to do a western Caribbean itinerary that normally includes the aforementioned ports.

Snorkeling and sting rays in Grand Cayman -- although the sting ray sites are crowded and you will probably get a flipper in your face at some point. The ruins in Costa Maya were not as far as some others -- only about an hour -- most are two or more hours by bus. Might try the SNUBA diving if you like snorkeling -- like Scuba but you don't have to be certified and your air tank is on a raft and you are attatched by a 20 ft. air tube. The islands are great for water sports -- St. Thomas and St. Maarten especially.
