Welcome to CC.. you will find a wealth of info on these boards.. my best advice is to read read and read some more.. All of your questions I am sure have been asked and answered 100 times over:)

You will be able to find out all about your excursions here. I would suggest in Cayman swimming with the stingrays tho :)

 

As for the Conquest we sailed her back in October and loved it.. great crew great ship..

 

Dining times depend on when you prefer to eat.. we had 8pm seating and it worked out for us..

 

Casino can not help you with.. never went in there:eek:
