Shore Excursions with lunch

We haven't done full day excursions in the past, but will on our April cruise. We plan to do a full day excursion in Rome and maybe one or two other ports. We've avoided them in the past as we're vegetarian. Last year we talked to both HAL's shore excursion dept. before the cruise and to our ship's shore excursion person (one of the better ones) and were discouraged from booking a full day.

I'm going to book a full day Rome when excursions are available, but just hope there will be things we can eat or the restaurant will let us get something else or we can go get something to eat close by. Any suggestions?
