Holland America vs. Celebrity, post 2000

what do you see are the differences on Holland America vs Celebrity, on board the newer ships? looking at the ships, the experience, everything.

My wife and I pretty much just alternate between Celebrity and Holland America. The cuisine and service is "Premium" compared to the other mass-market cruise lines. The Millennium class ships of Celebrity are our favorites, but there are many things that HAL does really well.
