Our 11-day HAL cruise last fall had 3 formal nights (one was not on a sea day, though we had 4 or 5 sea days). Cruiseline websites will tell you how many formal nights are standard for the length of your cruise--for HAL, I think 11 is the number where you jump up to 3 nights, until you hit 18 or 20 day cruises....
