Mexican Riviera excursions

Im looking for suggestions for great excursions on the Star in the Mexican Riviera. I am really interested in a horseback riding one, but I am a little nervous because the last time I was in Mexico (Puerta Vallarta) I did one and the poor horses were ready to drop dead under us. Any suggestions or experiences would be greatly appreciated!!! Thanks all.

Can't help except to add the same thing was true when our granddaughters did horse back riding in Mexico.
